Getting a consistent reveal where the casing meets the jamb makes for a professional looking job. In the video, the installer used a "reveal block" which is an easy jig to make in the shop. The shop made guide will do the job, but you can buy a Trim Gauge at amazon which is adjustable and looks rather handy for doing more than just trim work.
